Replacement of Toilet / Leaks

I had recently replaced my toilet not really know what I was doing and when press the handle down the water slowly starts to go down but then starts leaking on the bottom of the toilet.

To fix this issue I bought a wax ring with bolts set and put down the wax ring under the toilet where I perceived the hole in the ground to be. I have tried at least 5 times to get it so it's all aligned but each time it still leaks.

I don't want to fasten the toilet down until I know I have this all aligned.

Is there something else I can do to make sure that on the bottom of the toilet where the floor is that it's all aligned right and it's sealed in a way so it doesn't continue to leak?

If the flange is setting on top of the finished flooring, then a single wax ring will work. If it's lower, then a thick wax, or two rings stacked.
There should be closet bolts for the closet flange.

When setting a bowl, I first place it down without wax and check to see if it fits flat to the floor. If it rocks, then shims are placed, usually at the back, pinning the front of the bowl down.
The toilet gets lifted back up, wax dropped over the flange, and then the bowl set down over that.

You very probably IMO have a partially clogged drain line from the toilet.

Your wax seal was also leaking, but that leaking could have been caused by you plunging into the clogged piping. The pressure of the plunging can blow out the wax seal.

To test this idea, run a garden hose in through a window, and point the hose full blast (no nozzle) into the closet flange. Have your helper turn on the water, and stand by to turn off the water on command.

A closet flange should be able to take a lot more water than a hose can deliver. I am not a plumber.
