Hi,
We are in a new home and I've noticed something that I'm not sure is usual. While cleaning out the drain grate I noticed there is a gap between the top of the drain channel and the tile. This is one of those infinity/linear tile type drains. This gap goes all the way across where the tile and drain meet. I have no idea how these are installed and if there is some type of water proof barrier behind this or not?

People often think that tile is the waterproofing in a shower...it is not, it is just a decorative, wear surface. As Terry said, the actual waterproofing is at least a layer lower in the pan. Now, it could be a cosmetic problem if not done well.
