Where to cut to replace sink drain through floor?

Replacing a double sink with a single. The previous install just butted connectors to each other with no space. I could use ideas of how to cut this and start at a good spot. One option is to cut between the top and lower tee and use a heat gun to pull out what is left of the sleeve. Then put a cleanout plug in the hole where the trap goes. I also don't see yet how the bottom is connected. It must be glued, but looks like that flesh colored pipe compound.

So I need to connect to the piece coming out the bottom of the cabinet. That bottom is about 4" off the floor, but I have no access to it without going under the crawlspace and even then won't be able to see that 4" between the floor and the cabinet bottom. I can't really leave any of the existing pipe because the new sink is 2" deeper than these 2. So the sink would hit the AAV. I thought the AAV was supposed to be above the bottom of the sink pan, but I guess it is good as long as it is above the sanitary T? I am dreading the thought of having to start in the crawlspace and work everything from there, but I am open to whatever it takes to do it right. Going to put quarter turn quality valves on the lines too.
