Sink Replacement

Today I have 33" dual basin kohler cast iron sink. I want to replace with a single basin stainless steel sink with one drain. I believe I have 2 issues.

1. Should I restrict new sink drain placement (with garbage disposal) to left or right side due to the plumbing (hot, cold and drain) enters into the bottom of the cabinet from the slab dead center under current sink?
2. I have already pulled out the sink (only to be put back in place) because a std 33" stainless steel with mounting rail will not fit current granite opening. So I need to expand granite opening about 1/2" on all sides OR buy custom sink size.

Any input on approach?
