Seasonal existing interior copper to exterior new Pex to existing PVC

I have an existing copper shut-off which I plan to replace with gate valve (with bleeder). Because of numerous curves I'd like to use pex to connect to new spicket. Along the way I'd like to T-off to connect to some existing 1/2" pvc that would enable me to supply water to a pool fill s/o and garage for still another spicket. I'd like to keep it as simple as possible since I'd be working under a low deck (@16") and I'm too old to be crawling in & out too many times. Any insight is appreciated.
