New home plumbing rough

i am currently in the process of my getting my home built. It is slab on grade. The photos attached are of my water heater closet. My plumber ran the pex bundles to the water heater closet but was off a few inches so they did not end up between the sill plate. As it sits now when I open the closet door after it gets sheetrocked the pex bundles will be visible as well as the studs on the back wall of the closet. Will it be easier for me to break out the concrete and move the pex lines a few inches? Or just frame a new wall to where the pex lines will end up between the new wall?

Maybe add bend supports for those lower lines. They seem like they are tighter radius than they should be.

From the photo, I am pretty sure that your manifolds don't have individual valves.
