Minimum guest bath dim

Minimum toilet width,

I have a 5' wide room I want to add a small bath & tiny sink.

what is the smallest I can make it to code?

I was thinking 30" x 60"

Most of your fixtures spacing is at 30" side to side, or 15" from center to end for spacing.
So 90" by 60" for a full bath with tub.

In the 20's there went by 24" for the lav and toilet. Not really room for arms. But then at least the bathroom was inside and not an outhouse.

You will need to think about the door. A swing-out door or a pocket door would be what you want.

yes, I was going to spec one of those small corner sinks.

I think a pocket door will work better
