Kitchen waste pipe elbow

Adding a new kitchen sink and ptrap to replace the rollercoaster PVC elbow situation in the cabinet, only to find more. I had planned to update with an aav inside the cabinet (even though I don't have venting issues specifically it seems like best practice) but did not expect to find that elbow in the waste pipe below the cabinet bottom. Is it do-able to just get that elbow off and refit a vertical pipe with the aav, or am I opening up a can of more worms by trying to get that elbow off myself (ie breaking it or it being impossible to actually remove with my strength, etc)?
Other details: Home is on crawl space that is inaccessible and drain vent actually does line up on roof with this drain pipe.
