I am installing a Kohler Forte deck mount tub faucet with handheld shower. The Kohler website says to use the k-438-k valve system with diverter. This valve system is for soldered connections. Is there some reason not to use flexible hose connections (e.g. compression fittings with appropriate adapters)?

Flexible connectors at best have a 10 year warranty. They are not meant to be installed in an enclosed location where you can't replace them. They are also a major flow restriction.
I would consider using PEX instead if you don't want to solder the connections.
