IKEA Sink install/toilet supply lines

I am currently working on putting a bathroom in our basement. We've got all the plumbing roughed in, the floor is just about done and then I'll be putting in our vanity and toilet. The plumber ran PEX line and then capped it and spooled up a bit as we still had some things to do before hooking it all up. IKEA's drain pipes from their sinks are 1.5". So I've got a few questions on how to proceed:

1. What type of adapter or reducing coupler do I need to connect the IKEA piping to that drain? As you can see I have a chunk of 2" pipe I can cut down to use.
2. How do I go from the capped PEX into something that will accept the supply lines for the faucet (and toilet for that matter)? Oh and side question... I am guessing I will need the PEX crimping tool?
3. For the supply lines, the plumber didnt put in any valves. Are they needed? Should I have a valve for the supply lines at each fixture? If so how do i incorporate those as well?

Any help is greatly appreciated. Will be heading out to Home Depot either this afternoon or tomorrow and will run it by the guys there as well but thought I'd check here first.

You normally glue a trap adapter onto 1.5" pipe for the trap.
Out of the top of the trap, for the tailpiece is where you use the 1.25" slip joint washer.
You can buy push on shutoffs for 1/2" PEX with 3/8" comp outlets.
It looks like you have 1.5" ABS going into a 2"x 1.5" santee.
