So I as part of bathtub to shower conversion I have access to the plumbing for the kitchen and vanity sink as well because they share the same wall. Most of the DWV is galvanized pipe. Would you recommend replacing it with ABS or PVC?

I recommend replacing it with ABS or PVC. It must be old, often the fittings are wrong too. It also gives you a chance to do some upsizing where needed. Often steel pipes of that age are closing up and have very little area left inside.

If you are asking which, use the one predominant in your local stores.

I would suspect that would be PVC.

Shielded couplers are nice for interfacing to existing galvanized, especially for vent pipes. The vent pipes are usually in better condition than the galvanized drain pipes.
