My old kitchen sink strainer assembly is held on with a metal nut. I want to replace the assembly but can't get the nut to turn. The sink is stainless steel. Do you know of a way to remove it without using a torch? I've hit the ridges on the nut with a hammer and metal bar, but the whole assembly turns, not just the nut. Using 2 channel locks doesn't work either. The nut on the new assembly is plastic.

I just had to deal with one of those yesterday. My favorite method is using a metal cutoff disc on my Dremel. It's very easy to control.
