Once the pipe goes aftee the p trap it goes straight up. If there is a slope of 1/4 inch how does one make the vertical pipe after the p trap plumb? I guess what im thinking is it wont be perfectly straight up due to the pitch.

If you use a sanitary tee, I think the slope change is built into the tee. If the fitting is something else, it will be close enough to vertical. 45 degrees is considered vertical for drains.

If your gluing (solvent-welding) PVC pipe, there is enough movement in the fitting (before it hardens) to get the pipe to drain aligned properly.
