Commercial deep fryer help

Fires up good. But when it reaches temp or you turn thermostat right down/off it backfires and the orfices will have a small candle like flame. If you blow them out it backfires again all three will get lite again. How can a small amount of gas still get thru the valve if it's off. Backfires I mean a small amount of gas continues to flow and gets ignited by the pilot when there's no call for heat

Hope so. Got one ordered. Someone else suggested the gas pressure might be to high
