how far can I adjust a square D 30/50 switch? Can I make it a 40/60? And what are the pitfalls of doing this? I know I will need to bring the tank pressure up from 28 to 38. Is there anything else I need to know?

Don't mess with the little screw. Adjusting the big screw you can usually get those switches up to about 55/75 max. No pitfalls as long as you pump can build 75 and you add the proper air to the tank.
