1 1/4" mixing valve will feed 8 metering showers. Would 1/2" PEX branches after the mix valve be enough

Even though it's a one pipe system?1/2" PEX per shower should be fine.
The heads only put out 2.5 gallons or less. I run 1/2" PEX for showers often.
1 1/4 mixing valve then a 1 1/4 Mainfold with 1/2" take offs to each shower. So the water will be a set temp thru one PEX line to the shower.One line? I have no idea what you have in mind then. Don't undersized it then. I think we need more information.
Not sure what u mean? Each run will be 20 feet or underThe only thing left to figure out is if your flow velocity is great enough to push 2.5gpm through 1/2" pex or your going to need 3/4" pex going to each shower.

That table is from the fittings, and those paths will total very few inches. The pipe velocities will be much less.The chart I gave you said it can push about 2.4gpm through 1/2" PEX B at 8ft per sec and you will have some psi loss (friction loss) while the shower is running.
