Is it advisable and possible to run for this PEX layout, without using elbows (i.e. just bends)?

Angle stops are standardized and fit on 1/2" CTS/copper tube size or threads.

What is that diagram for the shower column? The only way you can use swivel connections/hoses with washers is if you have an access panel. What shower column brand / model is that? You do not want a bunch of hoses buried in the wall..

https://plumbingonline.ca/products/sharkbite-u058lf can couple 3/4 inch pex to 1/2 inch copper with no soldering. It is possible to pull the plastic insert on the copper side for less resistance.

When we installed a shower similar to this we stubbed threads into the shower itself so that there are no hose connections in the wall behind. The instructions for these tend to be lacking, so I would advise having the unit on site while you figure out how to provide water to it so that you can actually hook it up.
I do have the unit and I specifically asked about this in the Showers and Bathtubs section

If you are not a plumber I dont think you would have a device to generate presure. How do you plan to do that?

I know this was a couple months ago (I stopped checking in here). I meant I was going to turn on the water to the addition. My inspector wasn't needing to require an air test on the supply side.
