The County shut the water off to a customer's house a few days ago and it looks like it might be a week of more before we get it turned back on. Should I shut the gas off to the water heater until we get water again?

Why turn the heat off set it the lowest temp setting and drain the system. Pour rv antifreeze in all the drains and toilets. 2 gallons should do it

It could cause the t&p valve to release. But that depends on other things. Vac mode is the normal thing to do when you shut the water off.
