Restaurant to Regular Retail - Plumbing Demo

I have a project where an existing restaurant is being converted to a retail space (bicycle shop).

What is the standard procedure in removing existing plumbing equipment, (e.g., grease traps).

Are these typically removed completely or abandoned in place?

Slab on grade or ? Remove old grease trap and cap piping with no-hub.
Other piping can be capped and left.
Local inspectors always may have their own opinion.

Hire someone to remove a grease trap... those are always really gnarly!

How much work really depends on whether the space is going to be taken over directly from restaurant to retail and a lease is already signed. Or does it need to go back to flat walls as a clean slate?

I used to do a lot of tenant improvement work and we would typically find spaces where the plumbing was cut back into the wall and capped.
