Indirect HW turn off

When going away for the weekend or on vacation I often turn off the Boiler. In the winter I lower it to 55. But the Indirect HW is still maintaining its high temp. Can I just put a switch on the thermostat wire going to the aquastat to disable it? Is this recommended? If so what kind of switch? The aquastat is wired to a 24v honeywell zone valve.
