I have 3/8" copper tubing coming out of bath wall and need to put a shut off valve in between. The copper is I.D. 3/8" and O.D. .500. I cant find any brass shut off valves anywhere where I live with 3/8" to 3/8" copper pipe compression on both ends. Do They make them? Can you help with other suggestions. I don't want to do any soldering or use PEX by the way if I don't have to as the copper pipe coming out the wall has no slack in it to pull out.

Whoops. Yes. They are called "in-line"
Dahl 511-31-31 is one instance, but they come with variations; 611-41-31 if you want a right angle. Their 511-41-31-14WHA has a built in hammer arrestor, even.

That's 3/8" OD comp x 3/8" OD comp. The OP needs 3/8" nom comp x 3/8" OD comp, aka 1/2" OD comp x 3/8" OD comp.

That was I, who misunderstood.
I was referring to what the OP wants on the valve outlet, 3/8" OD compression to allow a standard braided supply line, or 3/8" nom compression (1/2" OD compression) to allow reusing the rest of the existing 3/8" copper pipe.

I couldn't find any straight or inline stops with 3/8" nom compression inlets, although I didn't look super hard.

Cheers, Wayne
