I have a 3/4" copper supply coming into the house that has a flare fitting connecting the shutoff valve. The valve is defective. I'm wanting to know if I could just remove the flare fitting and sweat a different fitting to connect new valve to.

A flare fitting means the supply line is "soft" copper. That stuff is frequently less-than-round and difficult to
get a good solder joint to. There is really no reason to eliminate the flare joint as adapter fittings for pipe
thread, compression joint, solder joint, etc., are readily available.

Well, there is that about it. Soft copper is rarely round like hard copper. If you can keep the flare, that's one less worry.
