Also, what is the purpose of the silver valve here at the top of this supply line?

You could use a sharkbite by threaded nut supply line there. You could cut the copper and push the fitting onto the end of the copper.

The shutoff at the top is to bleed air out of the line. Almost never would you have one of those. But heck, I did install one the other day on a recirc line for just that reason.
