3 stem to 1 stem shower valve done from INSIDE shower

I have some apartments where you can't change out from 3 to 1 valve from the backside because the next door apartment and shower stall is there. I know DUH!!

So far most plumbers want to have a fiberglass person go in and cut a larger hole so they can then do the re-plumb, then the fiberglass person comes back and reseals it and it supposed to look good?

Anyway I thought they had kits for this purpose, yes you had to cut a pretty big template out but the kit included a very large chrome plate to cover the opening. Is this not enough room to do the plumbing necessary?
