Roof Penetration for Tank Vent and bathroom vent:

Hello all,
I will be running a hot water tank vent pipe through the roof.
Can anyone recommend the best way to make this transition while maintaining fire safety and water tightness?
Note: I have seen the collar sleeve things that go over the vent, But I am wondering how a watertight seal is achieved between the top of the collar and where it contacts the vent. Is a high-temperature caulk used to accomplish this?

Also, am doing a bathroom vent and would like to know the best way to make a leak proof penetration.
