Question about high flow

I am thinking of running 3/4 PEX to the drop ears for a shower head and then the drop ears are the kind that are reducing from 3/4 to 1/2 and out to the end devices. Is that ok to do? I guess what I am really concerned with is back pressure from when that sudden conversion happens at the shower head, body sprayers, or hand shower port. Thank you.

That will not be a problem. Turbulence at the boundary will not have much effect with the velocities involved with supplying a showerhead.

Since 1992 toilets 1.6 gpf , faucets and shower heads 2.6 gpm. There are several things that will effect volume and water pressure. Every valve,device, fitting and length of pipe will effect pressure drop. Along with shower valves and heads. Measuring gpm and not know what the water pressure tells nothing. If the manufacturer want 60 lbs at 10 gpm ( or whatever) . First see what your water pressure is static than with a measures flow. Can get a gage with a hose bib fitting at hardware , box store or amazon. Feeding valves with 3/4 and then reducing size won't do any harm. From a shower valve to shower head jumping up in size probably won't change a thing.
