galvanized female nipples to brass male pipe/nipple and than shut off valve is ok?

Connecting supply lines to both kitchen and bathroom sink.

Please look at picture...I have 4 galvanized stubs coming out from the concrete floor..
There are 4 female galvanized couplings on each of them...can I put male brass nipples schedule 40 that is 5" long and
put a chrome plated brass shut off valve (commonly available in big box stores) and than correct 3/8" faucet line (which is already a part of new faucet )
