Un-sweat copper connections

I have a shower valve I would like to reuse, but it is soldered in copper pipes. Can I cut it out, then re heat and will it slide apart so I can reuse? How would I get the old solder out of the valve?

Yes,

You can heat the valve and pull the pipes out.

You can resolder with new pipe, by heating the valve, reinserting the pipes and soldering the new pipes.

Most plumbers don't reuse valves, but prefer to install new valves.
You won't get a better time to do it.
