Plumbing drains

Hoping to get some advice on moving a toilet

We want to move our toilet to where our shower currently is.

Is there a problem replacing the current 2 inch line from the shower with a 3 inch?
Should we keep the 3" running up to the vent or remove/cap it? Should the vanity drain be moved higher than the toilet line?

All fixtures currently have proper venting and the 2" vent line that was previously for the shower would be replaced with a 3" for the new toilet.

You don't want the toilet going into a san cross, or really even into a fixture cross. The new toilets will skip right over that and drain into the opposing side. Not where Mr Poo should travel to.
Keep the lav above the inlet for the toilet.
