Connecting ice maker to old copper water line

I'll be connecting my new refrigerator's ice maker to the old copper water line. I assume that I'm supposed to hold one nut while turning the other, but it's too hard to turn by hand with pliers. (see photo)

How can I loosen it? Am I not twisting hard enough? Am I twisting the wrong way?

I can't find any instruction about this online. I can only find info about newer style connectors.

This old water line came with the house. It's maybe 30 years old and it hasn't been hooked up while I've owned it. I assume that it is hooked up to the home water supply.

Get a new nut and sleeve, cut the tube, clean it and install the new nut and sleeve.

You ought to be able to unscrew it with two good wrenches

I would use a tubing cutter to cut off the top couple inches of line and install a new fitting. Alternatively, you could get a stainless-braided flex hose and replace the entire line.
