Moen is a good choice. Not the fanciest. Not the crappiest. And 9 times out of 10 if something goes wrong just bring the cartridge in to Home Depot or somewhere like that for a free replacement. In my opinion Moen looks better than Delta too in most cases.

Just use a brass fitting (MIP x PEX) Into the trap, and run sleeved PEX up through your slab. At your trap primer transition to copper if you want to give it some ridgidity. Anything after your trap primer is not pressurized. And don't forget a debris loop :)
