There are specialty tools designed to give you a good cut on pex, but you may have something in house that would work. A nice sharp knife will work, but is harder to get it square. A sharp blade on a pruning tool will work. A pvc pipe cutter will work. Sears has a neat razor cutter plier tool that works.

Note, on the Sharkbite fittings, you can damage the o-ring if the cut isn't nice. They recommend a deburring tool (HD has them, usually). It puts a micro-bevel on the pex so it doesn't catch the o-ring; it won't help if it isn't square, though.

Shower head

Ok...I have more plumbing questions. I ordered a Symmons BP-46-2X temptrol valve, which should be delivered today. I haven't ordered a shower head yet though. I'm leaning towards a 6 or 8 inch rain head. My question is, what needs to be on the end of the shower head feed pipe. I know a 90 and a threaded piece, but, is it an inside or outside thread?...1/2 inch??...
