What does the rough-in look like for a wall mount shower panel? (Example below). These all seem to connect with 1/2 NPT fittings. If I wager a guess, is it drop ears with nipples to extend out the proper distance from the wall? Are there standard (or at least most common) dimensions for the location off the floor, distance between hot/cold, etc?

There is no standard - they are not interchangeable. You will need the installation instructions to get the plumbing in exactly the right place. ANd, on some, the exact placement is super critical, on others, you have a bit more leaway. Last, you may need a minimum of at least 3/4" supply lines, and a BIG WH to be able to use it for very long without running out of water.
