More often than not when my ice maker starts filling it makes an awful ratchet-sounding noise. It sounds like it is coming from the valve. Could it be too much pressure or could it somehow have frozen?

Icemakers are great, but they are a particularly troublesome item, often. To me the way you describe the noise, it sounds like it MAY be the ice trying to eject, but the clutch mechanism that drives the ejector is making the noise. I have seen on Whirlpool fridges the nylon gear that turns the ejector cracks at the hub and cannot develop torque to eject ice. It just makes a skritch, skritch, skritch sound. If it is a Whirpool or one of the other names built by them, you may be able to remove the plastic cover in the front of the icemaker, and see what I'm talking about. I have no experience on other brands, and my current fridge is an LG, which like all (well most) others, the cubes in the ice bucket fuse together if ice is not drawn out often enough especially in this warm, humid weather in most of the country. Very hard to really know without actually looking at it at least..

Sometimes you have to put Vaseline or KY Jelly on the Ice maker Drive gears.
Teflon bases Lube work the best in low temperature.
Be careful what you get the KY on, or you could blow a gasket...
