Assuming you choose their preformed pan, yes, it has a perfect pitch from all sides IF the floor is level, or you can make it level first. If you attempt to level it with excess thinset underneath, you'll likely fail. This is one reason why a mudbed can be more accommodating...it can easily conform to any unlevel situation or if your drain is not perfectly centered (but the riser still needs to be entirely plumb)...but, it takes more skill to get it perfect, so there are tradeoffs.
