Garbage Disposer & Drain Height

I have encountered the too-high drain / garbage-disposal conundrum. The drain pipe enters into a brick wall (a structural wall) at 19" above finished floor (at center of pipe). Wife insists on garbage disposal. I know the advice is to have the drain pipe 16" from finished floor. But I really do not want to remove the bricks--I am not convinced the drain goes straight down, as the cast iron stack is located on another wall, about 5 feet away. The shallowest (non-ADA) sink I could find has 7&7/8" basin with 8" at drain (the drain is in the center of the sink). I also found Mountain Plumbing Disposers have 5.5" to center of discharge pipe. https://mountainplumbing.com/wp-content/uploads/2023/02/STEALTH750-spec-sht-10-11-22.pdf.

My calculations are:
34.5" (bottom of countertop to finished floor)
- 8" sink
- 5.5" (center of Mountain Plumbint discharge pipe)
= 21" (center of disposer discharge above finished floor)
19" center of drain pipe in wall.

I know that the water level for the trap weir will be below the disposer discharge. But I do not know if this can be plumbed correctly. Any advice is greatly appreciated. Another consideration: As I live in Illinois, I believe dishwasher cannot discharge into disposer.

I just noticed 34.5" (bottom of countertop to finished floor). That implies you are planning to use an undermount sink. Making things more challenging than if you used a top-mount sink.

Thank you. If I read between the lines, are you saying that disposer discharge 1.5-2” inches above drain is not enough space to plumb?

I am not sure I understand what you are saying. If the thing you call "drain" is the trap adapter, then I would very much disagree with your conclusion. I suspect the minimum drop, from middle of disposal discharge to middle of trap arm could be about 1/4 inch, and 1/2 inch should be comfortable.
