Work with old PVC?

I'm remodeling my kitchen and need to move the drain for the sink over one stud cavity. I'm going to go from copper to PEX for the water which should be easy.

My question is about working with the old PVC. If I cut the drain, I won't have anything left to work with. Do I just use a smaller diameter pipe to create an inside coupling??? Suggestions?

You cut the pipe out of the fitting with a tool like these.

The kitchen gets it's own vent and the washer gets it's own vent. Those vents can tie together at 42" above the floor.
