Hello,
I'm about to take on replacing a faulty pressure tank, returning to store, and the dripping pump that sits on top.
I think I can do the re-plumbing, wiring the switch, and priming the pump but there's a small tube running from the switch down into a PVC joint/elbow.
I'm going to guess it's got to do with pressure?
I've searched the world over in forums and pictures and no other system has this.
What is it?

That is just where the pressure switch is teed into the line to sense the pressure. Some times those tubes are attached to the pump case, and sometimes they are attached to the pipe somewhere after the pump and close to the tank.
