In copper plumbing is it a good idea to put in "water hammer" vertical air pocket extensions on hot and cold water outlet locations, or is this not done any more? If they are done how long should they be 12" or 6"?

Also what about one large water hammer air pocket vertical pipe at the water service entry location?

Water hammer arrestors
The have pistons in them, and they don't water log.
Air chambers water log.

They should go on the ice maker, washer and dishwasher.
You can put them more places, but those three are the important ones.
