The Allen screw that holds the handle for my Moen valve is either stuck or possible stripped. I am replacing the handle/escutcheon with a new trim kit so I am not worried about saving this handle.

If it is in fact stripped or corroded in place (it was installed around 1998 or so) what do I do? I have heard about drilling it out, but what does that mean exactly? What kind of drill bit and how much do I drill out?

Typically the Allen screw is on the underside of the handle. If you can't unthread it, then you would go thru your drill bit collection and find one that is slightly larger than the screw, and drill until you have removed the portion that holds the handle on. You have the new trim, so after the handle is off, you then will need a phillips screw driver to remove the backing part.
