Shower drains in concrete floor

Hello I am just starting the remodel of a tiled shower from 1956. the last shower I did was when they still did hot mops for the tile pans, I realize times and methods have changed, my first couple of questions are.
1. with a concrete tile pan how do I install a new drain do I have to chip or cut up the floor. or is there a product that allows me to mate the old drain to a new shower pan I will be building.
2. I plan on tiling the new pan and walls best moisture barrier for pan and walls etc

If I'm getting plumbing ready for a mud set pan I install a new drain at that time, once that clamps the liner.
