My entire house is copper pipe except for the supply line to my toilet which is a polybutylene* pipe for some reason. I need to get rid of this and replace it for insurance reasons. I bought the house like this so I'm not sure why the pipe was replaced or how much copper they replaced. Everything other than this is all copper.

Is there any way to know what I need to replace before cutting some drywall out first? Would whomever did this have replaced the entire run from the sink to the toilet with poly or just a short section right behind the drywall and the shutoff for the toilet?

No way to say. Could have been replaced for a number of reasons, so you can't know how much was replaced without getting eyes on it.

You could pop a hole in the wall, and get an inspection camera in there if you've got one. Otherwise, drywall replacement can be cheaper.

Since you are in Florida, I suspect your house is on a slab.
I would look in the attic to see if you have the polyethylene running there. I suspect the copper leaked. Now you could replace the polyethylene that is there now, and I doubt anybody would object to that. Either that, or fish soft copper.

Insurance reasons? Did the insurance company give you an inspection?

Had to switch to a new carrier for other reasons and the new insurance came to check the house prior to insuring it. They said if we replaced that piece of polybutylene they'd insure us. I'm sure it was a leak as well that they fixed as we have copper coming out everywhere else.

I'll check up in the attic tomorrow to see if there is any polybutylene up there and update Thank you.

Edit: I just noticed my autocorrect was putting polyethylene down instead of polybutylene, which is sort of an important part of why I need to replace it.
