I have a brass fitting with a pinhole leak.

When I remove the fitting, can I slide the existing piece of PEX back onto it and crimp? Or do I need to cut it back so there's a fresh piece of pipe?

It's a short piece without any extra, so I'd have to go back further and redo more work.

I doubt that you can reuse the old PEX and get a good seal with it. I would cut it back to where it's unused and add some more length.
After it's been snugged onto a fitting for that long, it can form a relationship and not want to be moved around and reused like an old dishrag. It's why I rarely if ever reuse any type of supply line either.

I don't know that i'd re-use the pipe. But I frequently snap the rings and splice in a fresh piece of pipe.

If the other end of that PEX is on a metal fitting and is accessible, you could remove that whole piece of PEX and put in a new piece.

It really depends on if the PEX is scratched or gouged up. If you can get the ring off cleanly, maybe. Otherwise, replace that section.
