New construction plumbing labor: how many labor hours would you ballpark?

I will be using a good, fully licensed plumber - talking to 2 plumbing contractors now. One will be giving me a fixed price bid for rough-in materials and labor (I'm supplying fixtures), the other is willing to work on a T&M basis. Asking the pro's here to help me understand how many hours a job like this would take, and what factors would make the numbers go up or down significantly? Do you pros have formulas to estimate how much work goes into each type of fixture or room?

Here are some factors that affect the time:
Single story stick framed new construction
all walls including interior walls are 2x6.,
6/12 pitch, ridge height is 16'.
I-joist floor over 30" crawlspace; waste and water lines can be plumbed after i-joists are set and before subfloor is down if that makes a difference. Plenty of unobstructed room to run vents from each bathroom and the kitchen, and no plumbing runs in exterior walls.

3 Bathrooms, kitchen, laundry room in main house; 1 bathroom in detached slab-on-grade guest house; 1 half-bath in detached garage/shop. Heat pump water heater. Main water line and pressure pump by others (the company that drilled the well is also running the 2" main to the house). One bathroom's waste line has 30' run, the other two are about 15'. [Pool house and garage shop waste lines are in place already). 7 bathroom sinks and 2 kitchen sinks (1 is a double sink in an island). 3 walk-in tiled showers, 1 standard tub/shower. The extravagant items are wall-hung toilets (Geberit or Toto) and Grohe "eurostyle" shower mixing valves that have separate temperature and volume settings. Standard side-by-side laundry room setup.

Is this 100 hours of labor? 300? How would I get a good ballpark on this?
