Need advice on new kitchen sink drains...

I am building a new home- house was roughed in and I am finishing it. There are two drains for the double sink, both on the same horizontal plane.

Do I have to use them both?

Can I cap one with a removable cap to use as a clean-out?

Do I use a "T" to connect the sink drain, and the drain pipe from the disposal?

Click on the right pic and you will see a drawing of how it should be set up. You can put the disposal on any side you want. You can go to Low*s and find the drain tubeing to set it up that way and you can add a Fem. Adp. with C/O cap for the side you want to make a C/O.

This is awkward, but...
