I am going to replace my cartridge on my kitchen sink but am considering upgrading to a high-tech sink. My wife is a trained chef and I also cook a lot. We are considering a touchless or a touch activated.

Considering a Moen, Delta, or Kohler. I watched a review about 3 years old that said if a Delta develops a leak it drains internally into the cabinet vs Moen that leaks at the exterior part of the valve, so you know to fix it. I would appreciate any input on which faucet between these brands would be most reliable?

Touch are not reliable. I think all have only one year. No lifetime warranty like with the standard Moen, Delta or Kohler.
You could always get lucky, but save yourself the grief.

FYI just checked with Delta's website but the warranty for a homeowner is 5 years on electronics. It is still an indication of the lack of longterm reliability compared to the other faucet components.

From Delta Warranty page.

Electronic Parts

Electronic parts (other than batteries), if any, of Delta® faucets purchased from deltafaucet.com or authorized Delta sellers are warranted to the original consumer purchaser to be free from defects in material and workmanship for five (5) years from the date of original purchase or, for commercial purchasers, for one (1) year from the date of original purchase. No warranty is provided on batteries
