I purchased 2 cf of Nelsen Cation Resin a few years ago, thinking my softener would need recharging in the near future, and the media brought the order total up to where shipping was free. It's been stored in its unopened plastic bags since then.

The softener is still doing OK after over 10 years, but I'd like to reclaim the space taken up by the "new" media. I'm now wondering if this stuff is still good, or does it die sitting on the shelf?

It has a shelf life, but this depends on the conditions. Open the bags, if the media is still moist, you might be ok. Be sure to check for biological fouling, mold etc. If anything appears funny, dispose of it.
