Is it ok if I use this 5" brass nipple on galvanized pipe?

Brass will work on galvanized, but during a remodel, it is not prudent to leave any galvanized in the mix. While it can last a number of years, the brass could easily outlast a typical human's lifespan and be perfectly fine, galvanized will be rusting and decreasing the ID and eventually leak.
