interupting a superstore thermostat

Hey Guys
I have a boiler that feeds 2 superstore tanks. They're all plumbed and valved to run in series or independently. Right now they run in series - thing is it's just me and the wife for a month or two straight and then we get loads of company and need both tanks for a busy weekend. Can I just put a regular 110v switch in the thermostat line to interupt the call for heat from the second unneeded tank. Then flip the valves to just use the priority tank? Makes sense to me but just wanna bounce it off people who know more or have a better idea. Thanks
