How were these pipes connected?

Since all the connections are threaded in, but the end points are fixed, how were these pipes connected? Is that connection with the red arrow the key that allows this to be done? Also, when disconnecting this line from the water heater, is it correct that I won't be able to unscrew anything before first cutting a pipe? Much appreciated!

Yes, that is where to start. It is called a union. You disconnect it then can remove the rest piece by piece.
